Dice rolling in a game can be used for many things, randomness being the most obvious. Dice can also be used as counters. The dice themselves can be unique and different sizes, shapes and colors to represent different things.
Dice Rolling
Some board games incorporate elements of role playing. It can be that players control a character that improves over time. It can also be a game that encourages or inspires storytelling.
Role Playing

This was pitched to me as a light dnd game with amazing components and story. The components and story are amazing, but coming in new to the game and playing with new players the game quickly dismantled into a rulebook read-fest and we weren't able to get through the first quest. I still really like the game and will definitely work through the campaign, but the number of rules I think put it more on par with medium-weight RPGs. Make sure to read the rulebook, watch a video tutorial, and then a video play through before starting this with a fresh group.

If you like anthropomorphic heroes rescuing a withering king from an obligatory evil step mother, then this game will have you squeaking with joy. Mice and Mystics was my first dungeon crawl, and I feel like the theme may have blinded me somewhat to the simplified encounter mechanics. With the accompanying narrative it is an easy to get swept up in the game, and one I look forward to playing with my kids when they are older.

The theme and the artwork is wonderful, but the cheese accumulation by the enemies leads to situations that are quite frustrating sometimes. I've played this with several different groups, and have seen wildly different end results based solely on whether or not the minions surge at bad times or if the enemy defenders manage to deal 3 hits in one go, wiping out a mouse who rolls no shields. There is a bit too much luck involved which dilutes the enjoyment a bit.
