Dice rolling in a game can be used for many things, randomness being the most obvious. Dice can also be used as counters. The dice themselves can be unique and different sizes, shapes and colors to represent different things.

AmesGames
Pleasant genre piece with some interesting dice mechanics. Planning your little ranch out is fun, but the game design is so simple, I don't think there's much in the way of long term replayability here. Also there's no official solo mode. Well this is completely multiplayer-solitaire however, so BYOS is simple enough to do. I think the theme came through pretty well, but there's not enough strategy to the overall design to encourage any longevity. Kudos to the unique dice though.

Got at GenCon. I like that there is a solo mode. Clever game of trying to fit in animals and buildings to get the most points.

It is quite easy game, only downside for me is that it does not feel that there is much variation and important decision making.
