Dice rolling in a game can be used for many things, randomness being the most obvious. Dice can also be used as counters. The dice themselves can be unique and different sizes, shapes and colors to represent different things.
Dice Rolling
Games where you repeat an action (or part of an action) until you decide to stop due to increased (or not) risk of losing points or your turn.

Some board games incorporate elements of role playing. It can be that players control a character that improves over time. It can also be a game that encourages or inspires storytelling.
Role Playing
In storytelling games, players are provided with conceptual, written, or pictorial stimuli which must be incorporated into a story of the players' creation.

Escape the Dark Castle is one of my favourites particularly when played with a group that likes to get into the story. It’s also a perfect for playing with non gamers as the game if self explanatory. In an era where big games with lots of detailed minis are proliferating EtDC is a nice fresh change. Just proves a simple game (that doesn’t break the bank) can have a big impact and be lots of fun.
Barninator
Simple, quick, and fun. Dice rolls determine success or failure, and the revealing of nasty attackers in the dark makes for an amusing experience.

This game is easy to learn and only takes about a half hour to play which is very enticing for a lot of people. It's not a game you would plan on getting together to play, but it's a nice game to have at a board game night. If overplayed, though, it can get repetitive and dull, but usually you wouldn't play it so many times back to back anyway.
