Dice rolling in a game can be used for many things, randomness being the most obvious. Dice can also be used as counters. The dice themselves can be unique and different sizes, shapes and colors to represent different things.
Dice Rolling
Hand management games are games with cards in them that reward players for playing the cards in certain sequences or groups. The optimal sequence/grouping may vary, depending on board position, cards held and cards played by opponents. Managing your hand means gaining the most value out of available cards under given circumstances. Cards often have multiple uses in the game, further obfuscating an "optimal" sequence.
Hand Management
Play occurs upon a modular board that is composed of multiple pieces, often tiles or cards. In many games, board placement is randomized, leading to different possibilities for strategy and exploration.Some games in this category have multiple boards which are not used simultaneously, preserving table space. Unused boards remain out of play until they are required.
Modular Board
In games with a trading mechanic, the players can exchange game items between each other.

GoT Catan adds some interesting mechanics but I don't think they're as tight and as well thought out as the original game. We played this with 6 players using the extension and my own feeling was that it was too cumbersome with this amount of players. There's extra convolution with turns adding in a "special building phase" which makes turns even longer. I can't help feel like the special building phase was shoe-horned in to balance things out but it just doesn't feel right. I would say, if you're really in to Game of Thrones and don't already own Catan, the 3-4 player game is worth it because you can play the classic base game when you want and add the Game of Thrones stuff in when you want to try something a bit different. The 5-6 player expansion just doesn't feel right to me. Others on the table enjoyed it enough but it's not something I'd recommend over other 5-6 player games.

Nothing revolutionary, an effective solution for expanding player count. High quality components, but the solution for limiting turn-wait-times with higher player counts is a but clunky and remedial.

Fun game, I don't like regular Catan because it's too luck based, but I find this version to be much better. Still suffers same issues as normal Catan (edges are useless, game too die dependent). However, the wildlings addition is great. The hero card addition would be great if it were randomized and if the heroes were actually balanced. Not much thought went into the hero cards.
